My cookbooks are a no-nonsense approach to good health. They are a healthy answer to the current epidemic of
weight and health problems in adults and children. My recipes are not duplicated versions found in other
cookbooks. Ingredients used are familiar to everyone.
I discovered that you really are what you eat.
I literally transformed myself through nutrition.
Natural food, prepared naturally, is the key. Hello, my name is Mary Glenda
and I'm a critical care nurse and nutrition enthusiast. I found that it's usually not the food itself that will harm you,
but what's in it or on it. I avoid the bad, manufactured, simple carbs and only use the good, natural, complex carbs.
The brain is fueled by the good carbohydrates. I avoid the bad fats 90% of the time, and use the good fats of
omega 3 fatty acids.
My recipes are an uncomplicated natural way of eating that can easily be maintained for a lifetime. Your
body will right itself using a variety of my recipes.
Natural foods are not addictive. We've all heard of "chocolate addicts" and "sugar addicts", but who ever
heard of "vegetable addicts" or "fruit addicts" or "honey addicts". It's the sugar in chocolate that's the problem,
not the chocolate.
I use honey from clover to sweeten my recipes, and purchase any brand at the best price. Current studies report
that any complex carb such as fruit or honey when eaten as a snack without other food, will combat depression.
Researchers at the University of California recently discovered that honey boosts levels of disease-fighting
antioxidants. They found that adding 4 tablespoons of honey to subject's daily diets increased their blood levels
of natural antioxidants. Other experts report that antioxidants and especially omega 3's help keep brain cells from
degenerating. Omega 3's also help many other health problems. The National Honey Board reports that honey
contains vitamins, minerals, amino acids and antioxidants. Honey is fructose, the same as
fruit and is also a complex carbohydrate, the good carb. It is sweeter than sugar, which is a simple carbohydrate,
the bad carb (There's something
worse than sugar). I use healthy, non-allergic, stone ground whole grains.
I avoid whole wheat and refined white wheat flour because it causes serious digestive problems, bloating and
weight gain in many people. It also makes arthritis symptoms worse. I use allergy friendly, healthy whole grains,
honey and no bad fats. See

I don't count calories or eat by numbers. It's unnecessary with natural foods. Manufactured and empty calories
need to be counted because our bodies can't handle them and therefore will store them. Calories from natural foods
don't need to be counted because they are quality calories that our bodies use naturally and won't store. Check

I do use eggs and cheese in some recipes because they are very good for you. The egg yolk contains lecithin
which breaks down fat in the body. For those with egg, cheese, milk, or nut allergies, substitutions may be used.
For severe diabetics, agave nectar may replace honey.
My health had deteriorated for many years, eventually putting me in a wheelchair.
In April 1999, I needed total care for medical problems, was physically disabled, and I weighed over 320
pounds from eating the wrong foods. Doctors are not nutritionists and as far as I know, neither are the
chefs on TV cooking shows. So I did my own research, combined it with common sense, and
completely changed my nutrition. My family helped by following my instructions.
Soon I was able to stand briefly. It was then that I created my own recipes.
I loved good food and I knew that diets didn't work. I knew that a magic pill had never been found.
Within a year, my health had profoundly and dramatically improved.
Today, my weight is normal and I walk with a cane. Nearly all my headaches are gone. My cholesterol
and low blood sugar levels are normal. My high triglycerides (blood fat levels) were over 600,
normal is around 50 to 100, and in less than a year, my levels dropped to 98.
My severe Arthritis and
Fibromyalgia are incredibly improved.
Instead of 6 tablets a day for heart problems, I now take only 2 a day. My high blood pressure is normal. My
severe edema is gone. I took Zantac over 12 years for serious stomach and intestinal problems.
I haven't had any Zantac or these problems since 1999.
My thinning hair has grown back. My Restless Legs Syndrome and Tinnitus are under control. I was unable to
exercise through most of my recovery, and found that all I need now is light exercise.
What hardships did I endure to accomplish this? None.
But it did take time, and I had to stick to my recipes 90% of the time, which was easy. Our bodies can
handle harmful things some of the time, but not most of the time. Remember that the absence of a major illness
doesn't mean that you're healthy. I had to remind myself that it took plenty of time to develop health problems and
obesity. I needed to be willing to take the time to reverse them. Many diets produce results of quick
weight loss, while ignoring the health aspects of truly good nutrition and maintaining the improvements.
I wanted to enjoy eating, while eating natural foods and treats, and I did.
In 1999, I was ready for a nursing home. Today, I have a second chance at life, and
I Feel Great!
In my Main Dishes and Quick Breads cookbook, I include a short story of how I
came to create these recipes, my recovery, and the things I learned. I want
you
to benefit from my recipes as I have. Using my recipes, my family and I do
not gain weight over
holidays, or feel bad after eating. I sincerely believe my cookbooks will help
you, and you'll feel like you're still eating all your favorite foods. The
ingredients I use are easily available at reasonable prices in supermarkets,
some in the nutrition section, or at health food stores.
Anyone can do what I've done. One year from today, you may either be worse than
you are, or better than you are. I want to help you to be better.
