How These Recipes Helped Me


I became disabled many years ago and was wheelchair bound, which ended my nursing career. My weight soared from about 120 pounds to over 320 pounds due to inactivity and eating the wrong foods. In 1999, I began researching and studying nutrition until I felt like an expert. I decided to see if you really are what you eat. From the knowledge I acquired, I invented my own recipes for every single thing I ate, from meat and vegetable dishes, fruits and breads, to desserts. It is an unspoken truth that we cannot live on food alone. We Need Desserts! I not only want to share my desserts with you, but all of my main dishes and breads too.

I'm concerned about the prevalence of misinformation and I hope my website and cookbooks will correct that. I wanted my desserts and main dishes to not only be beyond delicious, but quick and easy to prepare, because my disability kept me from being mobile in the kitchen but for a few minutes at a time. I wanted my desserts to be so good and filling that I wouldn't feel deprived. I Never Dieted! I ate a variety of all I wanted of my main dishes, meats, vegetables, fruits, and desserts. In 2 1/2 years my weight dropped from over 320 pounds to my present normal weight and I regained control of my life.

My naturally prepared foods, additive-free, fat-free, sugar-free, wheat-free, gluten-free and low gluten reversed or eliminated my numerous health problems. I mention many of these on the home page. I believe my desserts taste as good as junk food and my main dishes and quick breads taste as good as grandma's Sunday dinners. I wrote my short story called "To Live Again!" which appears in my main dishes cookbook. It tells how I came to create my recipes and all the benefits I derived from them. My story is also written in a way as to show the reader all the steps of discovery that I took, what happened to me as a result, and why. My hope is that my story will give inspiration for those who read it and the knowledge that they too can do what I've done. I was unable to exercise until recently, and it is very light exercise. It is amazing how well the body can heal itself when you stop putting unnatural foods in it.

In 1997, 4 out of 10 Americans were into alternatives. Many times these methods won't work when the body is full of unnatural manufactured foods containing bad fats, refined sugars, wheat, especially in white flour form, and additives. I believe the key to good health and weight loss is eating natural foods prepared naturally 90% of the time. 100% isn't practical, and 90% works just as well. I believe that reasonable amounts of a variety of natural ingredients will not be stored in the body as fat and weight gain.

Most of you might be aware that refined, processed foods and snacks containing sugar, fats, white flour, additives and questionable ingredients cause health problems, fat storage and weight gain in many people. Dieting, limiting portions, feeling deprived and less than full is terrible isn't it? It affects us psychologically and physically. When we go several hours without eating, our bodies think they are being starved and will store food as fat. I ate 3 meals a day and as many snacks and desserts as I wanted. I had no guilt over the holidays. My body never felt starved, but because my foods were natural, fat-free, sugar-free, wheat-free, low gluten, gluten-free, and lower in calories, I slowly lost weight and overcame my health problems.
